FATED FARMER SERIES: BARREL FERMENTED WILD ALE WITH PLUMS Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing and an integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Wild Culture and aged for 5-7 months, before refermenting on freshly harvested fruit. Fresh plums sourced from Lookout Farm in nearby Natick, Massachusetts lend this rendition of Fated Farmer an enticing nose of wildflower honey and plum, with a hint of lavender. A palate of tart plums is balanced by a crisp, lemony undertone. Appearance is an opaque, slightly hazy straw color. Available at both breweries today (3/19). 4 bottle limit per person, $16.05 each!

COLOR & GRAIN IMPERIAL STOUT AGED ON WHITE OAK & CHOCOLATE. 10.8% ABV. RELEASED at both breweries on Wednesday, March 21st, our 5th Anniversary. 1 bottle limit per person, $15.05 each. We drew our inspiration from wood for this year's anniversary beer, its natural beauty as well as its building and lasting strength, provides layers in the depth of character in a concentric annual growth cycle. Color & Grain Imperial Stout Aged on Oak & Chocolate serves as an apt representation of our continued growth at our five year milestone. Color & Grain: Oak & Chocolate is an Imperial Stout that presents with a deep impression of complex and layered chocolate. Best served at cellar temperatures to reveal all the details! Aromas of chocolate malt balls and bruleed sugar fill the glass. Luxuriously silky mouthfeel reminiscent of melted chocolate bars with an oak derived vanillin subtlety. The flavors continue to extend with subtle roasted malt, then dark, charred figs, dates, then finally with a rich molasses and dry, dark cacao. A minimal, balancing bitterness with subtle warming alcohol reveals a finish expressive, bright and fruity lightly roasted coffee notes. The palate ends with oak tannin structure.
