If you’re like me you are probably already thinking about what to make for dinner tomorrow night and something that the kids will actually eat. Mid-week meals don’t need to be complicated to be nutritious and filling...my turn-to meal during the week is an easy frittata. I vary the recipe depending on what I have on hand...it’s a great way to use leftover veggies. I indulge and use cream but if you are avoiding dairy you can also use almond milk - just reduce the amount you use so that it sets properly.
