Pb granola bars using almond pulp from almond milk! Recipe: (I doubled his recipe) -in a bowl combine 1/4 cup of ground flax with 1/4 cup of maple syrup. Mix and let sit for 5 minutes to bind -after that add the other ingredients. •I used all the almond pulp from a 2 cup almond 8 cup water batch it gave me about 1 cup of pulp maybe more. •1 cup of oats •2 Tb chia seeds •a few spoonsfuls of nut butter •few sprinkles of cinnamon •dash of salt and nut meg Mix everything with a fork until it's evenly mixed Then add in a small handful or two of vegan chocolate chips (optional this one does not have chocolate) •Spread into a loaf pan or a square pan. (If it's too long you may use 3/4 of a pan making sure the bars are at least 1 1/2 inches thick. •Bake on 350 for 20-25 minutes or until the top is golden brown. I made the topping with: -1/3 cup of cashew butter -1-2 tsp coconut oil Heat in a small pot on the stove or in microwave for a little bit. -when it was all done and cooled off for at least 15 minutes I poured the nut butter on top and put it in the freezer until solid. Transferred to the fridge and then cut them in the morning.
