True story: I filled a big container with @sammideesplantbasedcuisine Mac & Cheese yesterday at the Plant Based Showcase so I could bring it home. I love their Soul Food Platter but the mac has my heart.
When you’re vegan it’s acceptable and encouraged to eat potato skins for dinner. I checked!

Thick and creamy cashew cheese sauce made in minutes.
After my big costco shop, I have been so inspired to get into the kitchen and meal prep!
Since I bought a big bag of raw cashews, I decided to whip up my super easy, cashew cheese sauce recipe.
You can use this stirred into pasta to make mac and cheese, tossed in a salad as a rich dressing, or simply like queso with a few corn chips dipped in.
I need to be honest I really eyeball this, so the measurements are rough, however I always recommend to taste as you go.
In my blender I added:
- 1 cup raw cashews
- 2 cups water
- 1/2 cup nutritional yeast
- 1 tablespoon paprika
- 1 tablespoon tamari
- pinch of pepper
And simply blend! Takes less than five minutes to whip up and is so handy to have on hand.
