Roasted veggies with sweet and tangy miso tempeh tonight. Super quick throw together meal. .Roast veggies on hand. I used sweet potatoes and cauliflower. Mix miso, agave, fresh ginger and garlic, bit of amino acids and vinegar (I used a local bee vinegar for tang) soak tempeh for 10 min and sauté until browned. About 5-7 min. Remove tempeh and pour 1/4 c of water to scrape up the pan bits, adding fresh spinach to wilt. Mexican quinoa with roasted salmon. This quinoa is so easy, absolutely delicious, and can be used in so many ways. Great on its own as a meatless option, fantastic cold as a salad, and sometimes I mix it with chicken and do a baked casserole, or stuff it into roasted squash or peppers. Another favorite is for taco night; I take just a little of the ground beef mixture that I make for the boys, mix it into this quinoa, and I get all of the flavor but just a little of the meat. I make this stuff all the time, and it freezes beautifully. Tonight, I just topped it with some salmon that I seasoned with @daksspices “taco night” seasoning, a little salt, lime zest and juice, and a drizzle of pure maple syrup before roasting at 400° for about 10 min. Then, I topped it with a little low-fat Greek yogurt (blended with a little chipotle in adobo), pickled jalapeños, and fresh avocado and cilantro. Yum yum😋 **For the quinoa👇👇 1 small onion, diced 2 cloves garlic, minced Pinch of salt 1 C dry quinoa 2 C low-sodium chicken broth 1 can black beans 1 can corn 1 can diced tomatoes 1 can diced green chilies 1 T salt-free taco seasoning (I use the one from @daksspices) 1/4 C crumbled queso fresco cheese 1/2 C chopped fresh cilantro ***Sauté the onion and garlic in a medium saucepan with a pinch of salt until the onion has softened, then add remaining ingredients (except cheese and cilantro), stir and bring to a boil, then cover, reduce heat, and simmer for about 15 min.
