🌿Tofu, butternut squash, chickpeas, and a mix of green vegetables. A delicious and hearty meal!
🌱Thai Green Curry Recipe🌿
2 Cans Coconut Milk Low Fat
½ Cup water (plus 3 T water for frying)
4 T green curry paste
2 T soy sauce
1 medium butternut squash peeled and cubed
2 small shallots, minced
1 cup green beans
1 cup edamame
1-2 cups of pre-cooked chickpeas
1 300g block of tofu, drained and cubed
Fresh lime juice
Handful fresh cilantro
1 cup broccoli florets
Mix 1 T soy sauce with 1 T curry paste.
Toss cubed butternut squash with the curry soy sauce mixture until lightly coated.
Heat 2 T water in a large frying pan. Add butternut squash and cover until squash is tender. Stir occasionally. Add water as needed.
Heat 1 T water in a large sauce pan. Add shallots and cook until transluscent. Add coconut milk, ½ C water, and the remaining 3 T curry paste.
Add tofu to the coconut curry mixture. Cook for 5 minutes.
Add green beans, edamame, broccoli, and chickpeas. Cook briefly until vegetables are slightly tender and brilliantly green.
Add spinach cook until wilted but not brown.
To serve, place butternut squash and brown rice in desired dish. Add the coconut curry and vegetables over the top.
Top with cilantro, chili slices, and fresh lime juice.
