Kueh Lapis Legit, a Dutch-Indonesian thousand layer cake made with copious amounts of butter and egg yolks infused with brandy and spices. I’ve been having four slices a day, one slice for every hour I spent making it. As a child, I used to ask my parents why the homemade versions of this cake were so expensive. Now that I have to make it myself, I know that each homemade Kueh Lapis Legit cake is a labour of love as each layer of batter is painstakingly leveled out and grilled in the oven. Chinese New Year is in less than two weeks! [CNY Menu] Chocolate Cremeux with Mandarin Orange (part of 7 course $218++/pax menu). This yummy dessert made of white chocolate encasing a light citrus core is only available in the most premium 7 course menu at Madame Fan. 🔸 You starts with a prosperity yusheng that came with the light fragrance of yuzu, followed by Bird's Nest with Crab Meat and Crab Roe in Supreme Stock, then a whole South African abalone with tofu. We then move on to a steamed red spot garoupa, charcoal grilled wagyu with foie gras, and braised king prawn with ee fu noodles, before ending with this pretty Mandarin orange dessert. Here’s how to use up your leftover rice! One pot savoury rice porridge/stew. I made this for breakfast last weekend. Shiitake, carrots, parsley stems, seasonings are soy sauce, sesame oil, white pepper and a splash of unsweetened soy milk to thicken. Sometimes I make this for weekday breakfast too because it’s so fast and easy once you prep the ingredients ☺️
