Brinner stemmed from needing to eat this amazing bread from Wild Fire Bakery. Ratatouille Shakshouka. There really are 2 perfectly cooked runny eggs in that veg pile. Hard to scoop out eggs last when they cook on top of the veg!! But tasty all the same. Roast eggplant, mushrooms & peppers. Onion and fire-roasted tomatoes cooked down in fry pan, add roasted veg, top in eggs, cook to your liking. Scoop. Eat with bread. First time out with Stanley Ginsberg’s beautiful, truly delicious Pumpkin (and flax) Seed (sourdough) Rye. My dough was more hydrated, maybe 12% more, due to my rye flour, but I kept it saturated to see how the bake resulted, thinking it might be ciabatta like. Splendid bread! This is going to become a staple in my kitchen.
