The pic doesn’t do this smoothie justice- but I can assure it was probably one of the best smoothies I’ve ever made!! • • I used almond milk, frozen açaí, @foragerproject plain cashew yogurt, 🍶frozen strawberries and blueberries🍓🍇, @bobsredmill chocolate protein powder🍫, and some peanut butter 🥜 I was unsure about mixing all these different ingredients together but it turned out so good!!

Ratatouille!! 🍆 This is one of my favorites and a go to meal. Has eggs 🍳 but otherwise is meat free. Want my recipe? See below! 👇🏼 👇🏼 Ingredients: 1 Large Eggplant 🍆 2 Medium Zucchini 2 Medium Yellow Squash 1 small Onion 1 Red Bell Pepper 28 oz can of WHOLE tomatoes 2 tablespoons tomato paste 1/2 Cup Pinior Nior (you’re welcome) 2 Whole Bay Leafs 1/4 Cup Olive Oil 1 teaspoon Rosemary 1 teaspoon Italian Seasoning 1 tablespoon Basil 2 teaspoons salt 1 teaspoon black pepper Cut up eggplant 🍆, yellow squash, and zucchini into bite sized pieces. Sprinkle with salt and let hang out in a bowl. Drain can of tomatoes and get rid of extra juice. Crush tomatoes by hand (be careful that shit sprays and splatters) set drained crushed tomatoes to the side. Heat olive oil in pan and add cut up onion and bite sized red pepper. Cook until soft and add tomato paste. Cook for 3 more min. Add wine, crushed tomatoes and eggplant, squash and zucchini. Add all other seasonings. Including bay leaf and rosemary. Cook until all veggies are soft. About 15-20 min more on low/med heat. Stirring ever 5 min or so. Fry eggs for everyone eating about 5 min out from veggie mixture being done. This recipe serves 3-4 adults. We like our eggs over medium (completely done egg white, runny yolk) Serve with veggies on the bottoms, egg on top and toast (optional) on the side.
