I tried this bowl for the first time after watching so many ramen noodle soup bowls on insta and this will be my weekend lunch for sure. This was our last Sunday's lunch, you can guess how busy this week was. So, he asked " what are we having for lunch today" and I told I am going to assemble all these things, that will be our lunch. He was for sure scared 😂 but fortunately liked it As you can see it has got so many things in it, it sure had different steps but very easy one I would say. Super Healthy Banana Bread - 3/4 cup almond flour - 1/4 cup coconut flour - 2 T melted coconut oil - 2 large ripe mashed banana - 3 eggs - 1 tsp vanilla extract - 1 tsp cinnamon - 1/4 tsp nutmeg - 1/2 tsp salt - 3/4 tsp baking soda - 3/4 tsp baking soda Mix dry + wet ingredients in separate bowls. Next, mix all together with 1/4 cup of dark chocolate chips. Line bread pan with parchment paper, butter or coconut oil and add mixture. Slice another ripe banana in half for the top and sprinkle with a few more chocolate chips. Bake at 350 for 55 minutes. Most recipes call for 1/4 maple syrup as well, but I just added an extra egg and it is plenty sweet and delicious. #glutenfree #healthyrecipes #bananabread

I love a good mom hack! One of my faves is boosting baked treats with plants 🌱. I know, it may sound gross but trust me. That’s why it’s a hack. Think brownies with black beans (thank you @addiespahrkim) or cupcakes with a kick of plant protein. You may have to play around to get the right consistency, but I do this all the time without my kids realizing. The benefits: they get added protein and fiber and a little less of a glycemic rush and crash and I get peace of mind. Everyone wins. 🌱 🙌🏻 . .
