A third of my baking class final practical next week involves making Italian buttercream and applying it to a layer cake.
This practice cake is a vanilla chiffon with cardamom and apricot jam between the layers and the vanilla Italian buttercream outside. Pistachios stud the exterior and provide a nutty complement to the apricot.
