EGGPLANT FRIES ~ FAST FOOD MADE HEALTHY! 🍆🍆🍆 These babies are my favourite/literally addicting and and this is coming from a little girl who died for McDonald’s fries back in the day. 🍟🍟🍟 Plus they’re so easy to make! Literally 20 min all in, and I have a tip for no clean up after! Read on… 🤸🏼‍♀️🤸🏼‍♀️🤸🏼‍♀️ Ingredients: * 120g eggplant (this is a good portion for 1 person) * Salt, turmeric, & cumin (or flavoring of your choice) 🍆🍆🍆 Directions: 1. Preheat oven to 350 degrees f 2. Chop up eggplant into fries 3. Spray tray w/ cooking spray 4. Spread fries across tray evenly 5. Sprinkle w/ turmeric, cumin, & salt Pop in oven for 10 mins *Keep an eye on them as your oven temp may vary) 6. ENJOY! 🤾🏼‍♂️🤾🏼‍♂️🤾🏼‍♂️ Clean up Tip: * I serve the fries and burger right on the tin foil/parchment paper on the table aka NO CLEAN UP 🐂🐂🐂 Pairing: * Burger = grass fed beef burger/org turk burger *Recreate burger and fries vibe! * Tempeh = I love tempeh even though unconventional for sure. The grief of change // When discussing change, we often forget to address the grief and loss that can accompany it. Grief is experienced not only during death, but also in times of significant transformation. Whenever change occurs, even for the better, there is the potential for feelings of loss. • Sometimes, we must grieve what we are letting go of or leaving behind before we can truly start taking steps forward. This process can be painful - so painful that it might feel easier to stay where you are comfortable, rather than go where you can flourish. Can you think about a time where you put off letting go of a job, habit, or relationship because you were avoiding the emotional unpacking it often entails? • The thing is, we will remain stuck if we are unwilling to experience the uncomfortable parts of growth. We won’t move forward if we avoid the task. And, if you ask me, remaining stuck and comfortable is far less rewarding than trudging forward through the mud and emerging a stronger, wiser, braver, more whole version of you. • As you look at your intentions and goals, take stock of what you need to let go of in order to move towards where you want to be. What negative self-talk do you need to release? What relationships are keeping you stagnant? What habits are halting your progression? What do you need to leave behind? How can you honor what needs to be shed, while knowing that shedding is a necessary step in growing? • Looking at these parts of ourselves is challenging, but the more we can release and let go of, the lighter the load is as we move ahead in our lives. 🌿

PEANUT BUTTER SOY VEGGIE QUINOA 🌈 absolutely d e l i c i o u s & so easy to make @eatnourishlove . Cook 60g @indigo_herbs tricolour quinoa in 250ml boiling water • In a frying pan with 1 c boiling water & 1 tbsp @lkkeurope soy sauce, boil 1/2 c chopped bell peppers, 1/2 c zuchinni chunks.. once the liquid has nearly soaked up, add 1/2 c chopped mushrooms & a handful of chopped spinach • when all of this is done, add the quinoa to the veggies, mix well & add a big PHAT dollop of @meridianfoods peanut butter 👊 mix it all up & you're good to go. It's burger night tonight! 🍔 We make burgers at home pretty regularly. Our go-to's are a chickpea veggie burger (search my blog for the recipe) or turkey burgers (pictured here). Every so often I'll go classic and even make a beef burger. I like making my own burgers because they are quick, cheaper than take out, and I can customize to my heart's content 💚 I'm all about the fixin's when it comes to making burgers at home.
