Roast your veggies! (No, not like a celebrity roast.) It’s easy and delicious! This is probably my favorite way to cook vegetables. You can even do it with frozen veggies to save time. Here’s what to do: • Put your favorite veggies on a cookie sheet lined with foil. • Drizzle extra virgin olive oil and sprinkle with salt and pepper. • Roast at 425 degrees for 10 minutes. • Season again with salt and pepper. Shredded Brussel Sprouts Salad with Hazelnut Crunch & Dried Cranberries—> If you’re in need of a show-stopper of a salad for Christmas this year, look no further than this one. I served it for our 2017 Christmas lunch and then twice last month for a FriendsGiving and when I hosted my family Thanksgiving. The reviews are always the same: ⭐️⭐️⭐️⭐️⭐️ Here’s how to put it together... To prepare the HAZELNUT CRUNCH: 5 tablespoons extra-virgin olive oil 1/4 cup chopped fresh rosemary 2 tablespoons grated lemon zest, plus 2 tablespoons fresh juice (from about 1-2 lemons) 1 cup hazelnuts, coarsely chopped 2 tablespoons sugar Kosher salt and freshly ground pepper Heat oil in a medium pan over medium-high heat. Stir in rosemary and lemon zest and cook until fragrant, about 30 seconds to 1 minute. Add hazelnuts and cook, stirring frequently, until nuts are golden brown and rosemary and lemon zest are crisp, 1 to 2 minutes more. Add sugar and lemon juice and continue cooking, stirring, until liquid darkens and nuts begin to caramelize, just a few seconds. Season with salt and pepper. Transfer to a bowl and let cool completely, about 30 minutes. Break apart into smaller pieces before adding to the salad. * To put the SALAD together: 1 pound Brussels sprouts, shredded (6 cups) Hazelnut Crunch 1 heaping cup dried cranberries 1 cup freshly grated parmesan cheese 1 tablespoon fresh lemon juice 1/4 cup extra-virgin olive oil Kosher salt and freshly ground pepper Toss together sprouts, hazelnut crunch, cranberries & parmesan. Add lemon juice + olive oil & season with a good amount of kosher salt & freshly ground black pepper. *Note: The crunch can be made ahead and stored in an airtight container at room temperature up to 2 days.
