This recipe is for the pasta lovers who dont want to fill up on carbs before bed, this Zucchini Lasagne is high protein and so yummy. And the best thing about it it wont leave you feeling sluggish or bloated!
Preparation time: 30 minutes
1 onion, cut into small squares
2 garlic cloves, chopped finely
Half a capsicum, cut into small squares
2 carrots, cut into small squares
Handful cherry tomatoes, slices in halves
1 zucchini, sliced into long fine lasagne sheets (I use a peeler to get them nice, thin and long)
1 can tomato paste
1 tsp paprika
1 tsp italian seasoning
1 tsp chilli flakes (if desired)
⅔ cup cottage cheese
500g of minced beef or 500 grams if you would like that better
Cook onion, garlic and mince until the mince is done. Add vegetables and herbs, let simmer for at least 5-7 minutes. Add tomato paste and diced tomatoes and let simmer for a following 5 minutes. Once the sauce is ready begin the layering with the sauce, followed by the finely sliced zucchini, cottage cheese and repeat. Bake on 180 degree for 15 minutes.
