What's cooking in my kitchen? Kari Ayam or curry chicken. My curry chicken is very simple to make. It is 100% oil free and no frying involved, no saute. Everything is boiled. To make it healthier, I don't add coconut milk and creamer. For many people, this sounds crazy! How could you cook curry without "tumis"? And no "santan"? What??? I break all the rules when cooking this! If any of you are interested to experience eating this healthy curry chicken, try my simple #recipe: 1. Add enough water into the wok; 2. Add in chicken meat and potatoes; 3. Add in 2-3 tablespoons of meat curry powder; 4. Add in Faiza rempah ratus; 5. Add in some sugar, salt and chicken stock to taste; 6. Stir and cook with medium fire until meat is and potatoes are fully cooked. The curry will taste better if you wait until the gravy thickens. After 30-40 minutes, voila! There you have it, the healthiest curry ever!!! This chickpea kale curry dish will surely hit the spot! . Ingredients 1 teaspoon coconut oil 1 small red onion finely chopped 1 medium-sized sweet potato diced 2 cloves garlic minced 3 cm piece of fresh ginger minced 400 ml can diced tomatoes 125 ml / 1/2 cup vegetable stock or water 120 ml / 1/2 cup full-fat coconut milk, cream only 300 grams / 1 1/2 cups cooked chickpeas 80 grams / 3 cups fresh kale, chopped with stems removed Cauliflower rice, to serve . Spice Blend 1 teaspoon cumin 1 teaspoon turmeric 1 teaspoon ground coriander 1/2 teaspoon fenugreek 1/2 teaspoon cayenne pepper to taste 1 teaspoon sea salt to taste . Instructions Heat a large pan over medium heat and melt the coconut oil. Add the onion and cook for a couple of minutes, or until fragrant and translucent. Stir in the sweet potato and cook for another two minutes. . Add the garlic, ginger, and spice blend, and cook for another 30 seconds. Add the tomatoes, stock, and coconut milk, then stir to combine. Cover and increase the heat to bring the curry to a low boil. Add the chickpeas, then reduce the heat to low and simmer for about 20 minutes, or until the sweet potato is tender. . Once the sweet potato is cooked, remove the curry from the heat and stir in the kale. Enjoy!
