Jerusalem Artichokes - roasties!! Tossed in olive oil sprinkled with sea salt and a few twigs of thyme thrown on top and baked - really more-ish !! I was asked about cooking them and I have a few favourites this is one of them!! They are not at all like potatoes - their texture is more like a radish when raw or a beetroot when you cook them. I grow them every year now - very tough plants!!
