Hi friends 👋🏼 it’s been a while since I’ve done a Friday intro and since I have some new followers I figured I’d say heeeeeey 😊 for those of you that don’t know, I’m Liz- the creator and 1/2 of the clean eating couple.👫 I started my website 5 years ago and in January I quit my job to do this full time 😱 scariest/best thing I’ve ever done 🙌🏼 thought it would be fun to share 5 things I’m grateful for today: 1) my family- they’re truly the best ❤️ 2) getting to sleep in and snuggle with Ziti and Ty who had the day off today 3) our house 🏡 (that is still crazy to say!) we’re going to paint our bedroom today! 4) getting to see some of my favorite people (including my best friends @kem8393 and @nina_b47 hi hi ) next week because we’ll all be home for thanksgiving 🦃 5) all of you!! As promised, GINGERBREAD BALLS❄️🎅🏽🙌🏼 These taste like a fresh batch of gingerbread cookies and are SUPER easy to make!🙌🏼 ⠀ Ingredients: 6 dates ¾ cup oats ½ cup cashew pulp from the Almond Cow ¼ cup peanut butter 1 tsp coconut oil (not liquid form) ½ tsp cinnamon ½ tsp ginger ½ tsp nutmeg ¼ tsp cloves ⠀ Directions: In a food processor, process all ingredients except dates. Once the mixture is finely pulsed, add in dates and blend. ⠀ Once a dough is formed, use a spoon or your hands to form into small balls and refrigerate until ready to eat. ⠀ *Make sure to stain pulp first before making the balls!

What’s your favorite part of Thanksgiving dinner? I’m not into turkey much but give me all the stuffing and yam casserole! And I’m a huge fan of rich, creamy #caramels offered as a mid-meal treat! Add a copper bowl full of caramels or #chocolates to your beautiful #tablescape or tuck one into each place setting. They’re crowd pleasers!

Pasta with walnut sauce; fresh pasta, dried pasta or gnocchi. A traditional Italian sauce with some regional variations, all without cream but full of good fats & protein. You'll be surprised at the creamy flavour obtained just by emulsifying walnuts with lukewarm water & extra virgin olive oil. HOW; Put 1 big slice of white bread, crusts removed in a bowl & cover with a cup of milk. When it completely wet, drain & hand squeeze. Pop drained bread in the blender with 2 cups walnut kernels, 1/2 clove garlic, 10 marjoram leaves, 1 tbsp. parmesan cheese & 2 pinches of salt. Blend for a couple of minutes until walnuts becoming smooth. Add 5 tablespoons of olive oil and lukewarm water as needed to obtain a thick creamy sauce. When cooking the pasta remember to save a cup of the water to add to the pasta in case it remains dry, it also helps the sauce adhere.
