I was lucky enough to be gifted this beautiful tender Spanish lamb all the way from the Pyrenees... life is good when you have friends from these beautiful parts of the world! I was advised to roast the lamb with a pan of water in the bottom of the stove, this was ensure the lamb would stay tender and succulent whilst roasting. I have to admit it definitely made all the difference, the meat fell off the bone! A simple seasoning of fresh rosemary, garlic, salt, black pepper and my homemade lemon and herb infused olive oil! . . Hope you’re all having a wonderful Easter Bank Holiday🐣💛
