Keto crepes with whipped cream, strawberries, and shaved sugar free chocolate. What a way to start a morning. Berries are a limited allowable on a keto diet. It is not frequent that we indulge in berries, as they are still sugar, thus carbs. But on the glycemic index, berries rank among the lowest. I've used a total of 4 strawberries for these 3 crepes pictured. They are huge, and really, I can only eat about one, may one and a half. For the crepes, I blended in my Ninja blender 1/8th cup golden flax meal, 2 tbsp coconut flour, 1 tbsp psyllium husk powder, a squirt of lankanto sweetener, 4 large eggs, 1/4 melted butter, and 1 cup water. Blend until everything is well incorporated and is a more loose pancake batter. Heat pan to a medium heat, lightly spray with coconut oil. Ladle in about 1/2 cup of the batter. Swirl around pan till it coats bottom. Cover pan, allow to cook for about 3-4 minutes. Gently flip with a LARGE spatula. These are very fragile. Cook on other side another 2-3 minutes. last week was weird. did anyone else feel the odd ass energy shift?! #cancer season is upon us... YAY.......... i feel so out of balance and on edge and this isn’t me. this week i want to make a goal of giving myself some extra me time. i’ve been slacking SO hard on taking mental health breaks that it’s crazy. all of me has been poured out to all those around me this past week and i am DRAINED. so now i’m stepping back, refilling and focusing all my wonderful, loving energy on myself 💖 it’s okay to not please everyone (trust me, it doesn’t work anyway so please don’t waste valuable energy on it). it’s okay if you lose friendships or have to cut ties with family. it’s. okay. the truth of the matter is, if people are constantly draining you(intentionally or not), GET OUT. you do NOT deserve that. no one does. if you’re afraid of being alone, don’t. trust me, being alone and constantly having a full cup of self love is so much better than being with someone who only wants to see you fail. how can you bloom into your full potential when you’re not supported? you can’t. support yourself and watch yourself blossom into the person you always dreamt of 💘 #cancerbaby #myfavoriteseason #notreally

We women are so lucky to have an innate understanding of cycles. We are reminded monthly that life, mindsets, and emotions can and will change. We know that with patience we can evolve and renew ourselves. Every time I get my period, after the initial annoyance (and slight lil sigh of relief 🤣) I'm grateful for the opportunity to consider it yet another starting point.
