A soothing, simple, plantbased ,lowgi dinner tonight. It was a nice pleasant , Tuesday with mild temperatures in the bayarea #california. . 1.Masoor dal/red lentil with spinach and gooseberry/amla.Tempered the dal with fenugreek seeds, curry leaves,green chillies,aesofotida in mustard oil. . 2.Okra/bhindi cooked with onions, ginger, curry leaves, added turmeric,rasam powder,then added,grated coconut,buttermilk and cooked until it came together.Essy and very flavorful. . 3.Potol/parwal/pointed gourd Dalna cooked in pressure cooker .Very easy recipe,added chopped onions,ginger,tomatoes in oil along with cinnamon, bayleaf,spices, turmeric,salt to taste.Added the potol,fried for about 3 mins,then added only 1/2cup water (no more, as its almost a semi-dry gravy),cooked for 3 whistles.All done. . 4.Wholewheat-besan roti smeared with ghee. As simple as comfort food can get,gut healthy, light and flavorful meal. . Lunch. 1 cup rocket 3-4 cherry tomatoes, quartered 1/4 pear, finely sliced 1tbsp chopped walnuts 1 small zucchini, sliced and roasted in garlic olive oil 100g sliced sweet potato roasted in garlic olive oil 1/2 tbsp hemp seeds Mix all ingredients together and top with a dressing of hemp seed or olive oil and apple cider vinegar with honey. Optional: add finely grated parmesan. Season to taste with pink salt and freshly ground black pepper.
