For our Easter family meal today as well as my first serious baking in months, I had decided to go for tradition: an Easter lamb lemon cake (see previous post) and the very French and very delicious Fraisier (aka strawberry gâteau). I had initially planned to make a triple storey layer cake but I realized too late that I didn’t have enough strawberries and all the groceries had gone empty... So I went for this one cake but instead of the traditional vanilla buttercream (“crème mousseline”, made of crème pâtissière and whipped with soft unsalted butter), I used whipped cream to make it even more lighter and fluffy to the taste - after all I live in Chantilly now 😉. Turned out it was a great idea as today was quite a warm day and after spending quite some time around the table eating aperitif, starters, main course and cheese, no one would have gone for a very rich, heavyweight cake...
