Promised a friend I'd make her some Mint Oreo Truffles. They're really easy to make, only three ingredients! First you blend a whole package of Mint Oreo in you food processor, until they're finely ground. Then chunk up an 8 oz. block of cream cheese, add it to the food processor, and pulse until well mixed. You may need to scrape it all out into a bowl and mix it around some more to fully incorporate the ingredients. Form into one inch balls (I used my cookie scoop) and chill to firm up (minimum 1 hour). Then, microwave a bowl of dark chocolate chips, 30 seconds at a time, and stir between, until the chocolate is smooth and melted. Then, dip the balls into the melted dark chocolate, and place on a wax paper covered cookie sheet to cool. Store in your fridge. I'm about two thirds of the ways here. Currently chilling overnight. I'll dip them sometime tomorrow when I get home.
