Dinner was 2x filo tarts (one smoked mackerel, courgette and parsley, the other salmon, roasted pepper and basil), baked beans and broccoli. Joshua ate all apart from the broccoli. •One Pot Chicken Curry• This was a bit of a 'let's use everything up from the fridge' recipe. It's #slimmingworlddinner friendly too! Simply chop up any veg you have in your fridge - we used 1/2 courgette, 1 red pepper, a handful spinach leaves and 7 mushrooms. Then we used 3 chicken breasts, tomato puree, 1 dessert spoon of curry powder, 2 cups of water, cayenne and black pepper and 1 chicken stock cube. Set oven to 160 degrees C, chop all ingredients and mix in an oven dish. Bake for 2-3 hours until cooked through. Cook on a higher temperature or heat in a pan over a medium heat if you would like to cook it in a quicker amount of time. YUM! #batchcooking #onepotmeal #onepotdinner #toddlerfood
