2 oz Rum
1 oz Fresh Lime Juice
¾ oz Simple Syrup
5 Mint Leaves
3 Dashes Aromatic Bitters
3 Dashes Peychaud’s Bitters
Add all ingredients except bitters to a highball glass add pebble ice and swizzle. Top with more ice, bitters and garnish with a sprig of mint.

Today the 2018 class of bartenders will begin their journey in Palermo, Sicily, where tonight after dinner at Gagini (@gaginirestaurant) under the guidance of Averna's Master Blender Piero Fici (@piefic) they will experience what's known as the "Averna Ritual," a traditional way to savor the aromas and flavors of Averna. Last year after settling into the hotel, our group met up then walked through the dark and winding, narrow streets of Palermo for a welcome dinner. I was hazy from jet-lag but getting to meet so many bartenders--from Montreal to Malta and Sao Paulo to Berlin--and my new Italian friends kept me going, and at the end of dinner a side table was set up with bottles of Averna, glasses, and jars of citrus peels and fresh herbs. I was about to experience what's known in Sicily as the "Averna ritual" for the first time.
First you pour Averna into the specially designed "Womb" glass. Add a couple of ice cubes along with lemon peel and fresh mint. Then you tilt the glass on its side and gently roll back and forth to infuse the flavors and help release the aromatics before taking a sip. Though lemon peel and mint are traditional, you can use orange peel along with other aromatic herbs like rosemary or sage. And if you're lacking the traditional "Womb" glass you can recreate the Averna ritual using a snifter and gently rolling the ingredients in the glass in your hand rather than on its side on the table.
