I love making delicious vegan food and one way that I stay creative in the kitch is finding inspiration through meals that I’ve enjoyed at restaurants. This flavorful tofu + peanut soba noodle dish was inspired by one of my favorite vegan-friendly spots on Long Island @witches1902 aka Witches Brew (which was also my #1 hangout location of choice while @hofstrau since I’ve always preferred coffee houses > loud bars 🤓☕️) Recipe for the tofu + noodz is below 🍽
•~2-3 oz soba noodles (found in most health food stores, or just use spaghetti)
•1 package of @tra@traderjoes cabbage + carrot mix/ other veggies of your choice
•1 block @traderjoes baked teriyaki tofu
•2 tbsp. peanut butter + 2 tbsp. soy sauce + 1 tbsp. water (to make peanut sauce- just whisk or stir rapidly together)
•sprouts, nuts, or whatever you’d like (as a garnish)
•heat cabbage/veggies in a large skillet, adding a little soy sauce to moisten
•In a pot, boil water, and add soba noodles. Allow to cook for ~8 minutes
•cut tofu and add to veggie mixture (heat for a minute or two)
•drain the soba noodles and add to the veggies/tofu. Remove from heat.
•top with peanut sauce (whisk together peanut butter, soy sauce, and a little water)
•top w/ garnish and enjoy!
