Happy Sunday y’all. I’m actually a little bummed about my meal prep this week 😢 (I’m being overly critical of myself). But this took me longer than usual and then I had a few mishaps 😩. My brown rice did not cook nicely at all (it’s all mushy). I attempted to make Thai Red curry this week, but who knew you had to shake the coconut milk can before you open it?! Not me. 😬 #oops . I open the can and there was a hard layer on top, I was hitting it, hitting it, hitting it.. AND then it went everywhere...except my pan lol. So to comp, I added water, but added too much so it turned out way more watery than i would’ve liked. Oh well. I’ve been so hard on myself and this definitely did not help, but there was no way I was going to waste the food, so here it is: Pre workout: overnight oats Breakfast: protein shake with super easy hash browns from @highcarbhannah Lunch: Thai red curry with brown rice Snacks: carrots/cucumbers with hummus, bananas, popcorn sprinkled with black pepper and nutritional yeast 🌟 - Let’s have a great week 💕

Yesterday’s damage which included 4.5 miles of hiking and then leisurely ooohing and ahhhhing at everything old and rusty at #Vintage61 in Pottsville! It was a rough hike, you guys, I’m taking the day off today from doing anything active. 💕

Hi guys, my name’s Kirstin and please take me back to hot weather and lazily floating on a hot pink donut. 🙌🏼 Still here and I have, in fact, started training for the half marathon but after tweaking my knee mid-3 mi run on Monday, I decided to quit and learn how to pole dance instead. 😐 kinda joking. Settled for small, measurable goals in the meantime, like 10000 steps in one day without the knee hurting. Taking it slowly; so far so good! 🤞🏼
