💢 SUMMER EGG SALAD 💢 . Summer is here folks! A salad meal is a great option for summer. Have a hearty, delicious meal without the fuss of cooking (Makes for One) . INGREDIENTS: - 5 Boiled Eggs (sliced/diced) - 5-6 Baby Potatoes - ½ Red Pepper - 1 Cucumber - Salad leaves of your choice - Spring Onion (for garnish) - Walnuts for (garnish) - Vinegar - Sugar Dressing (mix together) - 4 tbsp Hung Curd - 2 tsp English Mustard - 1 clove of garlic - Crushed Pepper and Salt INSTRUCTIONS: 1. Hard boil eggs, de-shell and keep aside. Boil potatoes (pressure cook till 2 whistles) and let them cool 2. Cut thin strips of red pepper and cucumber, place in bowl and soak in a mix of vinegar, 1 tsp sugar and pinch of salt 3. Once the potatoes are cooled, with the back of a spoon flatten them with the skin on. In a pan heat olive oil and shallow fry the potatoes. Sprinkle salt and crushed pepper. 4. Assemble the salad by first mixing sliced eggs with red pepper, cucumber, salad leaves, add in the potatoes. Mix all with the dressing. 💕 WHOLE WHEAT PEANUT BUTTER BISKITS 💕 . Try em and let me know. Maybe bake it and surprise your girlfriend/boyfriend maybe? Or Mummy/Pappa....Hmm? <3 . Ingredients: - 1 cup peanut butter - 1 cup honey - 1 large egg - 1½ teaspoon vanilla extract - ½ teaspoon salt - ½ teaspoon baking soda - 2 Cups whole wheat flour Instructions: 1. Preheat oven to 350 degrees. 2. In a large bowl combine the peanut butter and honey and beat until totally incorporated. Stir in egg and vanilla. 3. Add the salt, soda and flour and mix until it comes together to form a dough. 4. Shape dough into small balls and fork to lightly press each dough ball down. 5. Bake for 10-12 minutes until cookies become slightly golden brown. 6. Remove from the oven and place the cookies on a wire rack to cool. . (NOTE: Be careful to not over bake!
