~Banana bread~ . Everyone I know likes banana bread! I haven’t met the one that doesn’t like it yet, is it you🤷‍♀️?? I make mine gluten free and vegan, as that is what me and my body prefer!! My recipe is a work in progress👷‍♀️👩‍🍳 and although this was delicious, I will try a few more versions before I decide which is my ultimate BB!!! Have you got an all time fave BB recipe? . This is my recipe so far, please feel free to suggest improvements! I will share again when I’ve tried a few more rounds: 3 ripe bananas (which I had to hide from my youngest son as he is addicted and no banana is safe if he is around, I have to ration them or it is all he would eat 🤣!!!), 1 cup finely ground oats, 2 cups gluten free flour, 1/2 c coconut sugar, flax egg, drizzle maple syrup, 1/2 cup vegan chocolate chips, 2 t baking powder, t baking soda, 1/2 cup peanut butter, t vanilla extract, t cinnamon, 2 t apple cider vinegar, 1/2 t salt. . Banana bread: SUGAR FREE, WHEAT FREE and DAIRY FREE. 250g almond flour 1 tbsp baking soda 5 peel ripe mashed bananas 5 eggs 4tbsp coconut oil 1 and 1/2 tbsp of maple syrup Mix all the ingredients together. Add 1 cup of chopped walnut to the mixture. 😅It wouldn’t be a weekend if I didn’t share a bread recipe now would it!? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🥜🍌Throwing it back to this - PEANUT BUTTER BANANA BREAD! (Vegan option too!) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🥄Ingredients * 2 cups of self-raising wholemeal flour * 1/3 of a cup of brown sugar * 1/2 a cup of ground almonds * 2 medium mashed bananas * 1 teaspoon of vanilla essence * 2 medium eggs (or flax seed eggs for vegan option) * 1 1/4 cups of plant milk * 4 tablespoons of smooth peanut butter * 1/2 cup of crushed walnuts (plus a few extra for the topping) * 1 teaspoon of baking powder * 1 tablespoon of apple cider vinegar ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Topping * Smooth peanut butter! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🥣Method * Preheat the oven to 180 degrees celsius and line/ grease a 1lb loaf tin. I greased mine with a little coconut oil or butter, however I also sometimes use baking paper to line the tin. * In a bowl, mix together the flour, sugar and ground almonds. * In a seperate bowl, mash your 2 bananas well and add the vanilla essence, milk, eggs and peanut butter. Gradually add the wet mixture to the dry mix bowl, combing into a smooth mix. You can either do this with a whisk or by hand. Then add the baking powder and apple cider vinegar. * When the mixture is well combined, pour it into your prepared tin and bake for 40-45 minutes (until knife comes out clean). * Allow the bread to cool for 10 minutes before removing it from the tin and allow it to cool completely before ‘icing’ it. When I say ‘icing’ it, I mean you can cover the top of the bread with your smooth peanut butter. Additionally you can add walnuts on top. One of My favourite breakfast: banana bread with coconut almond butter from #meridianfoods @meridianfoods What is your favourite? Recipe for the banana bread: Mash 3 medium ripe banana with a fork, add flax egg made with one table spoon of flaxseed and 2 tablespoons of water and let it rest for 15 minutes before add it to the bananas. Then add 3 tablespoons of coconut oil, 1/2 cup of coconut sugar, a pinch of salt, 1 and 1/2 cup of gluten free flour, 1 and 1/2 cup of fine oat, 1 and 1/2 cup of almond meal and 1 cup of almond coconut butter. Pour the mixture into a pan sprinkle some chocolate chips on top ( optional) and bake for 1 hour. Bananabread time! Ik had veel aardbeien en frambozen in huis dus ik dacht ik maak er ook een bananen/aardbeien/frambozenbrood van. Recept zelf bedacht: vegan en zonder toegevoegde suikers😄. Het is super lekker, fluffy en fruitig! Er zijn al 1001 recepten voor bananenbrood, maar als iemand dit recept graag wil zal ik ‘m delen!😉 Hele fijne zondag gewenst! ☀️ Bananabread time! Lots of strawberries and raspberries in my kitchen so I thought of making a banana/strawberry/raspberrybread. ☀️ Sunday ☀️ Bock auf ein leckeres #bananabreadrecipe ? Geht wirklich (wie immer bei mir) ganz easy😅 Für eine Kastenform: (ich hab eine Silikonform genommen - bei einer normalen evtl einfetten oder mit Backpapier auslegen ☝️) ◾100g Apfelmus, ungezuckert ODER 100g geriebener Apfel ◾3 reife Bananen (300g) ◾200g Vollkornmehl ◾1 Pck. Backpulver ◾2 Eier ◾1 TL Zimt ◾50g gehackte Haselnüsse (oder Andere) ➡️ Apfelmus und Bananen pürieren. 2 Eier dazu und verquirlen. Mehl, Backpulver, Zimt dazu und verquirlen und zum Schluss die gehackten Nüsse unterheben. Bei 180 Grad 45 min backen und gut abkühlen lassen.
