My first attempt at the 50/50 sourdough from « The Sourdough School » by @vanessakimbell The 85% hydration dough was built using half fresh-milled demeter wheat and half 1050 demeter wheat. All of the flour/grain came from Gailertsreuther Mühle. The 1% salt came from Hurtig in Chemnitz.
