overnight oats [aka running-out-the-door-oats]. just need some coffee in my other hand and I’ll be good to go this Wednesday morning. i love overnight oats because they are so versatile and you can eat them cold or heated up. [i prefer them heated up]. This recipe has no added sugars, but feel free to add 1-2 tsp honey, maple syrup, or stevia drips for extra sweetness. | | INGREDIENTS : 1/3 c @bobsredmill oats 2/3 c @califiafarms unsweetened almond milk 1 T chia seeds 1 T ground flax seeds 1 scoop @furtherfood collagen peptides (optional) 1/4 c (small handful) shredded carrots Small handful frozen blueberries. |. Add the above ingredients to a coffee mug/mason jar. Let sit overnight. Heat in the microwave for 2 minutes, and add a little extra almond milk if needed. So on Monday night I failed to plan for my meals and that’s never a good feeling. First off I can’t stand spending my money on any type of “fast food”! I have been trying to keep myself on a budget so spending money on lunch, etc is really not ideal. Second of all, I am so tired of junk fast food but unfortunately when I don’t prep that usually feels like the easiest and cheapest option 😪 . . . Yesterday I had a little extra to spend and although I’m not happy about spending so much — I can say I didn’t feel guilty about what I ate at the end of the day! This was my lunch from yesterday - a Sesame chicken salad from Panera & I got a prickled pear hibiscus cold brew tea🍵 About $12 total & GUILT-FREE! . . . Then after my first job I had to go straight to my second and I bought one of the protein packs from Starbucks and an iced skinny vanilla lattè. Once again guilt free (eating wise) I got a chicken wrap with a side of apples and cucumbers. But this was $15 total 🤦🏻‍♀️🤦🏻‍♀️🤦🏻‍♀️ . . . After spending almost $30 for a day of meals I have to say... that part was brutal and it was a lesson learned! Moral of the story.... Prep those meals! Don’t waste your money... but if it means spending a few extra bucks to make a better choice when you’re in a pinch, don’t hesitate! Try your best to pick healthier options✅
