There’s a new post up on the blog catching the end of MHAW if you feel inclined to click the link in my bio. Today is a rest day. I’m stoked as I only have one appointment this week. I’m usually swamped in them. I get my Monday to myself to make the most of being at home. Making the most of being at home doesn’t necessarily tackling all the tasks that ‘should’ be done. I’ll do what I can but I take these home days for as precious as they are. They give me the opportunity to properly rest. I find it hard to rest. I’m such a ‘do all the things!!!!!!!!’ person. I’m having to learn in the last year that I can no longer do all the things, and that I need to slow down and be careful with what I spend myself on. Let’s just say I find the spoon theory a hard concept to adapt to. It sums up my existence though 😒

Super easy to make, INCREDIBLY filling, and full of flavor without the guilt- all things we should require from our food! Water first, veggies most! Ps. I didn’t have celery so I used jicama! . . 1 can tuna (unsalted, in water) 2 cups broccoli slaw mix 1/4 Greek Yogurt 1 small apple, chopped 1/4 cup jicama, chopped Dressing (rice wine vinegar, coconut aminos, Dijon mustard, olive oil) Salt, pepper, garlic powder to taste . .
