Instant Pot "baked" potatoes are on weekly rotation at our house. They're so easy for weeknight dinners! You'll need 30-40 minutes for your average Russet potato. Favourite toppings are salsa, kidney beans and nutritional yeast or vegan queso, steamed broco and black beans. Vegan sour cream, spinach, avocado, chives...all great too! Really been loving just making recipes and sharing them lately, which is all Running on Real Food was when I started it. There was no SEO or site speed, social media strategy or email marketing or all the other nitty gritty and technical aspects that come with running an online business. Just me in the kitchen, making things and sharing them. I've especially been loving remaking old recipes from 2013-2014. The recipes are terribly written, the posts talk about what I did that day and my plans for the weekend and the photos are awful..haha. But those posts, as crappy as they are, are the beginning of what would eventually become a full-time job that I love so much. Sometimes as bloggers, we can get so caught up in the business side of things and the (self-imposed) pressure of constantly trying to grow and be better, you get little hints of "do I even want to do this anymore?" ...but after a couple days in the kitchen, away from my computer, the answer is always YES, ABSOLUTELY. Also, as soon as you're able to, hire people to do the stuff you don't love so much so you can focus on the stuff you do. Chances are they'll be a lot better at it than you anyways.
