Our Sunday tradition the past few weeks has included hiking & adventuring the trails through Lincoln Park – my parents both grew up in West Seattle, so it’s fun spending time in places they used to love 😊 Plus, ellie can’t get enough! . a good SUPERFOOD BANANA BREAD is kiiiiind of life changing 😎🍌 making this as an easy grab & go snack since i leave tomorrow night for vegas to visit bae, @toastsocietycafe for the week, and doing ALL the things before then 😌 also so bridge will have some snacks before he joins me the following day ✈️ this is so easy to throw together!! esp when you have one v ripe banana waiting to be used 💯 . Ingredients: 1 mashed banana 2 eggs 1 tsp vanilla extract 1/2 cup unsweetened almond milk 3 tbsp coconut oil 1/4 cup ground flaxseeds 1/4 cup hemp seeds 2 tbsp chia seeds 1 tsp ceylon cinnamon 3 scoops collagen peptides (optional) 1 box Simple Mills banana or pumpkin muffin mix Directions: Heat oven to 325°F. Whisk eggs, milk, banana, vanilla extract, and coconut oil together in a large bowl. Add ground flaxseeds, hemp seeds, chia seeds, cinnamon, collagen, and box mix until well-blended. Pour batter into lightly greased (or parchment paper covered) 8-by-4-inch loaf tin. Bake for 30 minutes. Then, add additional sliced banana on top, cover loosely with foil; bake an additional 25 to 30 minutes or until a toothpick comes out clean and edges of loaf start to pull away from the pan. Cool 10 minutes before removing from pan 💃 #rachaelsgoodeats

this next week i challenge you to be a little extra selfish with your time because at the end of the day, it’s YOUR time💥 schedule in something you’ve been wanting to do for months, make time to get in 3-4 consistent workouts this week, cook/bake a recipe you’ve been thinking about (hi, twix bars on my recent post 🍫), start saying no to things that don’t get you EXCITED/HAPPY!! our time is so precious and should only be spent doing things that truly interest you!! & plus, when you take care of YOU, it allows you to take care of others that much better 😊🙌 . make the healthy choice for YOU this week!! p.s. tomatillo tostadas 💃💃 nice little change up from my usual verde chicken taco recipe 😎 basically just two ingredients to make —> organic chicken breasts + a can of @traderjoes organic tomatillo salsa and that’s IT! feel free to customize your toppings 🌮 . directions: for shredded chicken, combine raw organic chicken breasts with a tbsp of extra virgin olive oil in a pot (i like to sear on either side before adding the salsa), add entire jar of salsa (generally 2 breasts per 1 jar), cover and bring to boil. reduce heat and cook on low for 15-20 minutes. transfer chicken to plate or cutting board & using two forks, shred chicken & add back to pot with salsa. toss and SERVE! i used @sietefoods almond flour tortillas, popped them in the oven until slightly crispy, layered with mixed greens, bell peppers, shredded chicken, cilantro, jalapeños, red onion, avo & hemp seeds 🔥 flavor is SO GOOD & is one of the easiest dinners you could ever make 👏 #rachaelsgoodeats

say hello to your new all-time favorite dessert.... my HEALTHY TWIX BARS 😻🍫 bridger and i can both confirm it’s even better the my raw mars bars recipe and POTENTIALLY the cookie skillet (still don’t know how i feel about that 🤨), but you guys.... you need to make this as soon as possible you’re gunna die !!!! . as always, recipe below for your convenience 😘 & do not be overwhelmed by the process!!! it’s easy i promise! . •Shortbread Layer: 1/2 cup coconut flour 1/2 cup almond flour 1/3 cup coconut oil, melted 3 tbsp honey, warmed (I love @wedderspoonofficial Manuka honey) •Caramel Layer: 1/2 cup almond butter (creamy or crunchy) 1/4 cup coconut oil 1 tsp vanilla extract 1/4 cup maple syrup pinch sea salt •Chocolate Layer: 1 dark chocolate bar (I used @eatingevolved Signature Dark) 1 tbsp coconut oil 1/4 tsp flakey sea salt Instructions: shortbread layer: Preheat oven to 350 degrees F. Combine coconut + almond flours w/ coconut oil & honey in large bowl. Stir out all crumbles of flour until thoroughly combined. Line 9x9 baking dish w/ parchment paper & pack down shortbread mixture into base. Bake for 10-12 min, or until starting to turn golden brown. Remove & let cool completely. Caramel Layer: Combine almond butter, coconut oil, vanilla, maple syrup & sea salt in saucepan over the stove on medium-low heat & heat until completely liquified, whisking together. Remove from burner & let cool completely. Chocolate Layer: Break up 🍫 bar into small bowl & add coconut oil. Warm in microwave for 30 sec intervals, stirring in between, until liquified. Or, heat over the stove. TWIX BARS: Once shortbread & caramel have completely cooled, pour caramel sauce over the base layer. spread out evenly. Set in fridge until it hardens (~20-35 minutes). Remove from fridge & pour choc over the top. spread out evenly. Sprinkle flakey sea salt & set back in fridge for 5-10 minutes to harden. Once chilled, remove the hardened mold from 9x9 pan by pulling on the sides of the parchment paper. Lay on cutting board & using a large chef's knife, slice into 1/2-inch strips. from there, slice each strip into thirds. ENJOY 😍 #rachaelsgoodeats #raw #glutenfree #dairyfree #refinedsugarfree

grilled today and made CHICKEN KABOBS for dinner 🍢 i mean, it’s still 45 degrees out, but it’s fine bc everything actually tastes so much better on the grill 😩 paired it with the most delish roasted potatoes and my OG cilantro avocado sauce 🙏 quite possibly my favorite meal ever!!! . . potatoes: slice baby potatoes in half or quarters, spray with avo or olive oil and season with @whatsgabycookin go-to blend. bake in the oven at 425 degrees F for 30 minutes, flipping 10 min before time is up cilantro avo sauce: blend together 1.5 cups fresh cilantro, 1/4 cup olive oil, 1 tbsp apple cider vinegar, 1 large avocado, 2 small limes juiced, 1/2 tbsp minced garlic, 1/4 tsp ground pepper, 1/4 tsp sea salt, 2 tbsp water in a blender or food processor & pulse until a smooth consistency forms. chill in fridge until dinner is ready! keeps for 3-4 days and makes the best dip for basically everything kabobs: cut organic chicken breasts into larger cubes along with bell peppers & red onion. marinate in @kouzinifoods extra virgin olive oil, a spritz of fresh lemon juice, italian seasoning and fresh basil for about 30 minutes. oil up the wooden sticks & alternate putting on the diff ingredients. grill 🔥 then serve with cilantro avo sauce & potatoes 💯 definitely worth standing in the freezing cold for these 👩‍🍳 enjoy! #rachaelsgoodeats
