Happy weekend πŸ’œ! Blackberry smoothie with sticky cardamon oats to start my Saturday. This was just what I was craving after my run along the river this morning. How to πŸ‘‡ I'm on my way to Birmingham for the weekend for various celebrations with my friends and family at the moment. Looking forward to catching up with everyone and a change of scene. What are your plans? Happy Thursday! Starting mine with a quick chilly run. Now refueling with this somewhat overflowing πŸ™ˆplum and raspberry buckwheat and chia parfait. How to πŸ‘‡ Hope you're having a great week so far. I'm off to see a talk show recording tonight! Should be fun! Have a good one! πŸ’– πŸ’– πŸ’– To make: - Soak 1/4 cup buckwheat in cold water. In a separate bowl mix 1 tbsp of chia with 100 ml plant milk and a little ground cardamom. Leave both overnight in the fridge. - In the morning rinse and blend the buckwheat with half a banana, a handful of raspberry, a tbsp of almond yoghurt, 1/4 cup oat milk and a little vanilla extract. - Add the chia pudding to your glass, layer up the buckwheat and top with frozen berries, plums, toasted coconut and a drizzle of almond butter! Good morning! It's been a little minute since I've had granola for breakfast so righting that wrong with cardamom and vanilla stove top granola with blackberries and almond yoghurt this morning. How to πŸ‘‡ What are your favourite granola pairings? Any new flavours I should try? I've been up to more yoga to start my day as I'm running later with my club so feeling all stretched out. Hope you have a great day! πŸ’œ πŸ’œ πŸ’œ To make: - Toast 1/4 cup oats in a pan for a minute or two.
- Add a pinch of ground cardamom, unsweetened coconut, a small handful of toasted pumpkin seeds, sunflower seeds, almonds, pecans and dried fruit to the pan and toast for a further minute.
- Turn off the heat and add a heaped teaspoon of maple syrup and a dash of vanilla extract and give everything a good stir.
- Spread out on parchment paper to cool and sprinkle with sea salt.

Happy Sunday! Just been for a great long run with friends and now I'm refueling with a raspberry and banana oat smoothie. How to πŸ‘‡ Hope the weekend's treating you well. My vegan tasting menu experience was amazing last night. So many delicious things. Today I'm going plant shopping and maybe a movie. Happy weekend! Chocolate is the best way to start Saturday, right? These chocolate maca berry oats were very welcome after my run. How to πŸ‘‡ I think I'm coming down with something but I'm pretending I'm not. Let's see if that works πŸ˜‚ Hope you're having a great weekend so far. I'm going to a pilates class and then out for a vegan tasting feast later! Can't wait! 🍫 🍫 🍫 To make: - Soak 1/3 cup oats in 100ml of warm water for 10 or so minutes.
- Cook oats with a further cup of water over a low heat stirring occasionally.

- Mix 1 tbsp chia seeds with 100ml coconut milk, ground cardamon and a dash of vanilla extract. Make sure to mix it well so that it doesn’t get clumpy. Leave in the fridge overnight.
- In the morning layer crushed berries (I used raspberries and blackberries), chia pudding, soy yoghurt, banana and frozen berries. - Finish off with a drizzle of almond butter. Happy Wednesday! Started mine with some yoga, and now I'm refuelling with cinnamon, raspberry and permission porridge with maple + tahini. How to πŸ‘‡ It was great to be our running with my club again last night, and even survived tackling big hills. Enjoying this rest day though, and I'm finally getting round to having my hair cut later. πŸ™ŒHave a great day.
