This is why waiters make special connections with customers that enter coffee shops to have breakfast with a cup of drip coffee or to have a cappuccino in the afternoon, Daniela and Kathy tell us. And being a waitress at Pershing Square, just in front of Grand Central Station, means having to interact with a lot of tourists. “We have to communicate through gestures instead of words”, says Kathy. “Tourists don’t always know all the different names for egg based recipes or pancakes, so I have to explain with my hands how we make scrambled or poached eggs, or even how we prepare our different types of coffees. I am more than a waitress, I am a mime!”
