Ever wondered how to eat Jerusalem artichokes (aka sunchokes... also aka fartichokes 😂 💨) without ruining a dinner party? Or ever wondered what the heck Jerusalem artichokes even are, and how do they grow? My latest @pbsfood video recipe features my dear friend and biodynamic farmer extraordinaire @camelias_insta as she harvests her sunchokes and shares her clever & super easy method of preparing them, which also has the added benefit of reducing the “windy” quality of this gnarly little tuber. They’re so crazy good prepared like this that I sometimes can’t stop eating them straight out of the jar. I spent yesterday crying angry tears as I watched in disbelief the footage of militarized police violently forcing Indigenous people off their lands to make way for a pipeline in British Columbia. May your 2019 be joyful and rewarding! 🎉 I rarely make New Year’s resolution aside from a vague aim at “being a better person, eating less sugar, drinking more water” yadda yadda...but in light of the year that was 2018, a year that was among the warmest on record, where hurricanes and wildfires raged and destroyed so much, and a year where scientists told us we have only 12 years to make massive and unprecedented changes to drastically reduce our greenhouse gas emissions if we want to avoid basically annihilating ourselves and the planet, I feel I have no choice this year but to make a loftier resolution... one where I find new ways to live more sustainably and to consume less, and one where I do everything I can to contribute even if only in the tiniest of ways to bring about more conversations, more action, more solution-finding to try to address this monumental problem we have all created and are now confronted with. As David Leonhardt writes in yesterday’s NYTimes, “future generations may ask why we were distracted by lesser matters.” And still, despite the seriousness of this challenge that is before us, I’m gonna keep on dancing and seeking out joy in every nook and cranny. So bring on 2019 and let’s make it a good one! As for that pie I’m holding, it’s the vegetarian version of my mom’s tourtière recipe and I’ll have a link to it tomorrow. #nye2018 #tourtiere #climateactionnow

Need a healthy-ish Christmas cookie recipe? These Salted Honey Cranberry Pepita Bars are sweetened with only honey and have 7 ingredients. 🎄🎄🎄🎄🎄🎄🎄🎄🎄🎄🎄🎄🎄🎄 For the Shortbread Base: • 1 cup + 2 Tbsp light spelt flour • 1/3 cup coconut oil • 2 Tbsp honey • Zest of 1 organic lemon (2 tsp) • 1/4 tsp sea salt For the Topping: • 1/3 cup dried cranberries • 3/4 cup raw pumpkin seeds • 1/4 cup honey • 2 Tbsp coconut oil • 1/4 tsp sea salt 🎄🎄🎄🎄🎄🎄🎄🎄🎄 In a large bowl mix the spelt, salt, liquified coconut oil, honey, and zest. Mix together until a soft uniform dough is obtained. Press this dough evenly into the bottom an 8-inch square baking pan lined with parchment paper. 🎄🎄🎄🎄🎄🎄🎄🎄🎄 To make the filling, mix all the ingredients together very well (making sure you use warmed, liquified coconut oil here so it integrates easily). Pour this sticky mixture on top of the shortbread base and carefully spread it out evenly. (Don’t worry if the honey isn’t completely evenly distributed, you can fix this during baking). Place the pan in a 350F oven on a rack in the upper third portion. Check about 15 minutes in, and tip the pan slowly from side to side to swirl the melted honey around gently if necessary to coat seeds evenly. At 25 minutes, check again to make sure nothing is burning. Your bars should be ready around the 30 minute mark, when the seeds look slightly toasted and the edges are a bit golden. Remove from oven and cool in the pan for about 20 minutes. Remove from the pan by pulling the sides of the parchment paper and allow the bars to finish cooling completely before slicing. Slice using a large sharp knife, using quick decisive strokes to cut into clean bars. The bars will store for several weeks in a cookie tin kept in a cool place. I made a special video to accompany this recipe, a couple years ago during one of my most memorable Christmases in Toronto with @theloveofcolour. You’ll see in the video, the technique for shaping the brioche into a star is actually quite easy. And yields such a satisfying result. If you watch all the way to the end, you will catch a glimpse of a very sweet little miss, eating a giant hunk of brioche by the Christmas tree.
