Rum Punch Cheesecake It’s hot out, like crazy hot out. I wanted to make my booze cake this week something cool and refreshing. Since my theme this week is grilling, I wanted to use a drink that would be mass provided for a barbecue. So I decided a pitcher of rum punch was just the ticket! _ Crust: I was hoping not to use my stove top or anything that requires heat, but after my s’mores bars, I really wanted to toast the crust, so I did. I mixed 2 Tbsp almond flour with 2 Tbsp shredded coconut and browned them on the stove top. Watch carefully because the coconut cooks fast. I added 2 Tbsp @swervesweetie sweetener and 2 tsp melted butter. I mixed it up and pressed it down in a mini pie dish, and set in fridge. _ Cheesecake: I followed the cheesecake instructions for 1/4th batch on the side of a @knox box. I added an extra half serving of gelatin, 3 chopped frozen strawberries, 2 Tbsp Swerve confectioners sweetener, a few squirts strawberry kiwi water enhancer, a few squirts strawberry pineapple smash drink enhancer, and 1 Tbsp Bacardi white rum. _ Notes: 1. You don’t need to toast the crust but it adds great taste. 2. The coconut makes the crust extra light and flaky! 👌 3. I didn’t need to add the extra gelatin, it was a mistake. 4. The last 2 pieces I froze, see last picture, and it cane out like a frozen custard. S’mores Bars Task: Come up with a summer themed recipes using @ketologie chocolate shake protein powder. My Solution/Thought Process: Summer = Camping, Camping = S’mores!!! _ This chocolate shake protein powder is so perfect! It tastes great on its own, which says a lot for protein powder. It also has perfect Keto macros! What more could you ask for? _ “Graham Cracker” Base: - 1/4 cup almond flour - 1/4 cup almond meal - 1/4 tsp cinnamon - 2 Tbsp @swe@swervesweetie confectioners Powder - 2 Tbsp melted butter 1. Cook almond flour and meal on stove top until lightly golden. Watch carefully and sit constantly, it cooks fast and continues to cook after the heat turns off. 2. Add sugar, cinnamon, and butter. Full mix with hands and press down on bottom of greased dish. 3. Set in refrigerator. _ Chocolate Center: - 1 Scoop Ketologie chocolate shake protein powder - 1 egg - 1 Tbsp nut milk - 1 Tbsp Butter - 49g (210 chips) @lilys_sweets dark chocolate baking chips 1. Melt chocolate over stove, slowly, with butter and milk, constantly stirring. 2. Remove chocolate from heat. 3. Mix together egg and protein powder. 4. Pour melted chocolate into powder mix slowly while stirring. 5. Pour evenly over crust. 6. Bake at 350 for 25-30 minutes. Center should be cooked however it will still be soft to the touch until the sweetener/chocolate cools. 7. Set in fridge and let cookcompletely. _ “Marshmallow” Topping: - 2 Egg whites - 1/2 tsp vinegar - 2/3 cup @swervesweetie - 1 tsp vanilla extract - 1/3 cup water 1. Whip egg whites and vinegar until foamy. 2. Slowly pour in half he sugar while whipping, until you get stiff peaks. 3. Simmer remaining water and sugar for 5 minutes while stirring. 4. Slowly pour syrup into egg whites while whipping. 5. Continue whipping until foamy and slightly glossy. 6. Place under broiler until desired marshmallow roasting level. _ Notes: Watch marshmallow closely, I burnt mine a little. I let mine cool before cutting, which resulted in a crisp top layer that shattered as I cut it, I’m going to try cutting it warm next time. I ate 3 immediately and had to bring the rest to work. Oh and sorry for all the pics, I couldn’t decide. 😅

Smoky Beef Biscuits and Gravy Task: Make a summer recipe out of @ketologie Smoky Beef Protein Broth. My Solution/Thought Process: It’s always summer in the south, and they love biscuits and gravy in the south! (Okay, I had a craving, but true logic is sound!) _ I would like to start out by saying this broth is phenomenal! Low calorie, low carb, high protein, easy to make, and extremely flavorful! This may be my new favorite way to get in my protein! _ Biscuits: - 2 Tbsp coconut flour - 1/4 tsp baking powder - 2 Eggs - 1/2 tsp vinegar - 1 Tbsp melted butter - 2 Tbsp sour cream - dash of salt 1) Separate Eggs 2) Mix flour with baking powder 3) Mix flour mixture, egg yolks, butter, sour cream, and salt. 4) Beat egg whites and vinegar to stiff peaks. 5) Fold egg whites into flour mixture 1/3 a bowl at a time. 6) Pour into 4 muffin tins and bake at 350 for 20 minutes or until starting to get golden on edges. _ Gravy: - 2 Scoops Ketologie smoky beef broth - 1 cup boiling water - 1/4 cup mushrooms - 1/4 tsp minced garlic - 1/2 serving frozen thin sliced steak - 1/2 tsp xanthan gum - 1 tsp coconut flour - s&p to taste 1) Mix broth powder with boiling water, set aside. 2) Pan fry garlic, mushrooms, and steak. 3) Pour broth into pan and bring to simmer. 4) Sprinkle Xanthan gum and coconut flour over brother and whisk while simmering until it begins to thicken. 5) Taste and add s&p as needed. Breakfast Enchiladas I call this Real Good Ception. I took the cheese enchiladas by @realgoodfoods and took out the cheese. I stuffed it with the bacon and egg from the breakfast sandwich by the same company. I took one of the cauliflower crusts, crumbled it, and fried it in butter to make it taste like hash browns, which I also stuffed in the enchiladas. I took 1/3 the breakfast sandwich cheese and placed it on top of the enchiladas, microwaving another 15 seconds to melt. _ A great option for when you feel like having a little fun win your food, or something out of he ordinary, but don’t feel like going to he grocery store. Chocolate Chip Cookie Dough! I completely came up with this on accident. I wanted my morning protein after my workout, but I really don’t like basic protein shakes. I decided to try mixing it with Greek yogurt but it still needed flavor, so I added some vanilla SF syrup. Which made it too liquidy, so I added some confectioners sweetener. Took a bite and it tasted just like cookie dough, so of course I had to add chocolate chips right?! _ I ended up making a double batch. Nutrient Rich Dessert Pizza I don’t know what I like more about this pizza. The fact that it’s crazy healthy or the fact that it’s deliciously sweet. _ This pizza has a chocolate zucchini crust. The spread is an ounce of cream cheese, 2 Tbsp confectioners sweetener, 1/4 tsp strawberry extract, and a few drops of pink food coloring for fun. I sprinkled on some cacao nibs, and a mix of nuts and seeds. It was the perfect mix of flavors, and I WILL be making this again many times in the future. _ I was able to utilize 4 of some of my fave Keto friendly products to accomplish this satisfying dessert. _ @kboshfood : I used a Kbosh chocolate zucchini pizza crust! Crazy delicious, full of nutrients from the zucchini, low carb, and only 120 calories for the full thing!!! _ _ @tilintilinchocolate : I sprinkled a Tbsp of Tilin Tilin cacao nibs on the pizza. Cacao nibs are great for you, packed full of antioxidants, magnesium, potassium, and iron! This specific brand sweetens with monk fruit, making it ultra Keto friendly. These are dangerous to have in the house because I’m constantly eating them out of the bag 😅 _ @goodmixfoods : I sprinkled a Tbsp of Good Mix Foods Blend 11 as a final touch. Their mix is an assortment for 11 different superfoods that are full of antioxidants, Omega-3s, protein, and prebiotic fiber. The 11 ingredients are: chia seeds, buckwheat, pumpkin seeds, almonds, flax seeds, sesame seeds, coconut, raw cacao nibs, goji berries, puffed millet, and puffed amaranth. Salty Nut Shot Cake This week I’m making all my food out of Keto friendly brands. Basically just a giant shot out to a few of my faves. For my booze cake I wanted to utilize my @pbf@pbf@pbfit.official so I googled peanut butter drinks and came across the salty nut shot. To turn the shot into a cake, I literally turned it into a shot glass, then filled it up with some boozy frosting! _ The Shot: - 2 oz Frangelico - 1.5 oz nut liquor - 2 Tbsp Peanut Butter - 1 Tbsp heavy Cream - Sat and peanuts on the rim _ The Cake: - 2 Tbsp @pbfit.official - 1 Tbsp coconut flour - 3 Tbsp @swe@swervesweetie - 1/2 tsp hazelnut extract - 1 Egg - 1 Tbsp Nut Milk _ The Boozy Frosting: - 2 Tbsp @pbfit.official - 3 Tbsp @swervesweetie confectioners - 1 cap of vodka - 1 Tbsp @davinci_gourmet sugar free hazelnut syrup - 1/2 tsp salt - Coarse salt sprinkled on top _ I honestly ate it with my hands, no fork involved. I have to say, the coarse salted added the perfect touch!
