Basil Lime Coconut Cookies 🌴🌿🥥 🍪 ⁣ .⁣ .⁣ I’ve been using sooo many fresh herbs 🌿 this Summer ☀️ so I decided to bake with them!! Plus citrus is always one of my fave flavors so I couldn’t resist adding Lime and now all I need is a mojito on the beach 🏝 🍹😂⁣ .⁣ .⁣ They’re gluten free, have added collagen, fiber high protein and paleo! Yay 💃🏽✨ Plus if you’re a basil fan like me they are such a perfect savory, but sweet treat! They’re also super easy! 🌴🥥🍥🍪 ⁣ .⁣ .⁣ .⁣ Basil Lime Coconut Cookies 🥥🌴🍪⁣ .⁣ .⁣ Ingredients:⁣ 🍪 1 scoop vanilla protein powder ⁣ 🍪 1 scoop @vitalproteins vanilla collagen powder ⁣ 🍪 2 eggs⁣ 🍪 1/4 cup @spectrum melted coconut oil⁣ 🍪 1/3cup @bobsredmill coconut flour⁣ 🍪 1/4 cup Almond flour ⁣ 🍪 1/4 tsp baking powder⁣ 🍪 1/4 tsp baking soda⁣ 🍪 juice and zest from 1 lime ⁣ 🍪 Chopped basil 🌿 leaves ⁣ 🍪 1/4 tsp pink Himalayan sea salt⁣ 🍪 1/3 cup @wholesomesweet coconut sugar⁣ or @swervesweetie brown sweetener 🍪 1 tsp vanilla extract ⁣ .⁣ .⁣ Directions:⁣ 1. Mix coconut oil, lime juice, zest eggs and vanilla ⁣ 2. Add dry ingredients and mix until combined. Fold in chopped basil.⁣ 3. Top with more coconut sugar is desired! ⁣ 4. Blackberry Orange 🍊 Protein Scones 💜⁣ ⁣ Going to be honest I didn’t grow up eating scones but man am I a fan! 🎉 Especially with this orange drizzle and fresh blackberries!! 🤤✨ Yummmm 😋 This recipe screams Summer!! 🌺🦄🌈⁣ ⁣ These scones are gluten free, paleo, dairy free, full of protein, fiber, vitamin C and antioxidants! 😎🎉 Blackberries are the highest in fiber out of any other berry 🍓☀️ & might arguably be the best?! 😜💕⁣ ⁣ 🍊3 eggs ⁣ 🍊2 scoops vanilla protein powder⁣ 🍊1/2 cup coconut flour⁣ 🍊1/2 cup almond flour⁣ 🍊1 tsp baking powder⁣ 🍊1 juiced orange with zest⁣ 🍊12oz. Fresh blackberries ⁣ 🍊1 tsp vanilla extract⁣ 🍊1/2 tsp pink Himalayan salt⁣ ⁣ Directions:⁣ 1. Mix all ingredients dry ingredients. ⁣ 2. Then add eggs & orange juice. Fold in blackberries.⁣ 3. Form into a circle on a greased baking sheet.⁣ 4.Then score into 8 pieces. ⁣ 5. Mango Raspberry Crumble Bars 🍓💕🥭⁣ ⁣ Mango season is on full effect and I literally have mangoes at every point in my kitchen!! 😜✨I made these crumble bars out of blueberries & strawberries 🍓 a few weeks ago and I had to make a mango version because they are FREAKING AWESOME!!! 😎⁣ ⁣ The gooey sweet filling is to die for!! 😍💕 The crust is also gluten free, dairy free, full of fiber, collagen, protein + healthy fats! Yay 😁 ✨⁣ ⁣ ⁣ Mango Raspberry Crumble Bars 🍓🥭💕✨⁣ ⁣ Ingredients:⁣ ⁣ FOR THE CRUST AND CRUMBLE⁣ ⁣ .⁣ 2 cups @bob@bobsredmill almond flour 1 cup @bobsredmill gluten free oats⠀⠀⁣ 1 scoop vanilla protein powder ⁣ 1 scoop @vitalproteins vanilla collagen powder ⁣ 1/3 cup coconut oil, room temp⠀⠀⁣ 1/3 cup @madhavafoods organic only five agave ⁣ 1 teaspoon vanilla extract⠀⠀⁣ 1/8 teaspoon salt⠀⠀⁣. FOR THE FILLING⠀⁣ ⁣ 2 cups fresh raspberries ⁣ 2 mangoes, puréed ⁣ 3 tablespoons tapioca flour. ⁣ Directions:⁣ 1. Preheat oven to 350ºF and spray an 8×8-inch pan with coconut oil cooking spray and set aside.⁣ 2. Mix all crust/crumble ingredients together in a large mixing bowl. Take 2/3 of the mixture and press it evenly onto the bottom of the oiled 8×8 pan. Set the rest of the crust/crumble mixture aside (this is what you will use for the crumble topping).⁣ 3. Bake crust at 350ºF for 10 minutes. Remove crust and set aside.⁣ 4. Place all ingredients for the filling into a medium sauce pan. Turn heat to high and bring filling to a boil, stirring often and breaking up the raspberries. Once boiling, turn heat down to low and let simmer for 10 minutes. Continue stirring.⁣ 5. Once the filling has thickened pour on top of the crust. ⁣ 6. Spread the rest of the crumble mixture over the top of the filling and then bake for another 15 minutes at 350ºF.⁣ 7. Let cool for 20 minutes before placing into the fridge for at least 2 hours to let the filling set. Vanilla extract ⁣ - 1 tsp baking powder ⁣ - 1 tsp baking soda⁣ - 1 tbsp cinnamon ⁣ - 2 tsp pumpkin pie spice ⁣ - 1/2 @silk unsweetened cashew milk⁣ - 1/4 tsp Himalayan sea salt ⁣ .⁣ Lemon Glaze 🍋 🍯⁣ .⁣ Ingredients:⁣ - 1 lemon zested and juiced 🍋 ⁣ - 1/2 scoop vanilla protein powder ⁣ .⁣ Glaze Directions: Mix all ingredients until smooth and drizzle over cooked banana bread! ⁣ .⁣ .⁣ 🍌🍞⁣ Banana Bread Directions:⁣ 1. Cauliflower Dill “Potato” Salad 🥔🌿🥗 ⁣ ⁣ This is one of my all time fave BBQ dishes! ♥️ It’s a crowd pleaser that doesn’t disappoint! 🙌🏼😻 Because BBQs are y’all filled with high calorie options and not⁣ many veggies 🍅 this side dish is perfect if your trying to eat lighter during the Summer ☀️⁣ ⁣ This salad is full of protein, antioxidants, protein and all colors of the rainbow 🌈 I always add extra veggies to any kind of salad I make to bump up the nutrient content!🥒🥕🥦 Don’t forget about your #micronutrients friends! 👯‍♀️💕⁣ ⁣ Cauliflower Dill “Potato” Salad 🥗 🌿🥔⁣ ⁣ Ingredients:⁣ - 1 head of cauliflower cut into florets⁣ - 3 tbsp. Chopped dill 🌿⁣ - 1/2 diced onion⁣ - 1/2 cup diced carrots 🥕 ⁣ - 1/2 cup diced celery ⁣ - 1/2 cup diced red pepper⁣ - 3 tbsp. Yellow mustard⁣ - 3 tbsp. Olive oil Mayo ⁣ - 6 hard boiled eggs 🥚 ⁣ - salt & pepper ⁣ ⁣ Directions:⁣ 1. Dice all veggies and place in a bowl. Add herbs, mayo and mustard.⁣ 2. Steam cauliflower florets until trendy but not too mushy! I know scientific! ⁣ 3. Bake eggs 🥚 in muffin pan for 25min at 350 degrees Fahrenheit.⁣ 4. Roasted Veggie Tacos 🌶🌮 & Avocado Lime Slaw 🥑⁣ ⁣ Spending #tacotuesday with a face full of roasted veggie tacos 🌮 and the Avocado cilantro Slaw 🌿🥑 is out of this world!! 💕😋Now I never met a taco I didn't like but these are so bursting with flavors and texture they might be fave! 💜💃🏽⁣ ⁣ Just because they’re healthy too doesn’t mean they’re not just as good as your local taqueria 🌮🌮🌮 Also for all you cilantro haters (I know you’re out there!)😉 you could totally omit this from the recipe if you like but... I mean Cilantro 🌿is LYFE for me!! 😍⁣ ⁣ Roasted Veggies Tacos 🌮 ⁣ ⁣ Ingredients:⁣ - 1 head cauliflower sliced ⁣ - 2 zucchini diced⁣ - 1 can low sodium chickpeas ⁣ - 1 head purple cabbage shredded ⁣ - 1 avocado ⁣ - 8oz. Plain Greek Yogurt ⁣ - 1 lime ⁣ - bunch of cilantro⁣ - Cotija cheese 🧀 ⁣ - Tortillas (I used @traderjoes 4g carb)⁣ - 1 tbsp. @traderjorsnChile Lime seasoning ⁣ - 1 tbsp. Cumin⁣ - Olive oil ⁣ ⁣ Directions: ⁣ 1. Place cut veggies and chickpeas on a baking sheet.⁣ 2. Spray with olive oil and season with Chile Lime seasoning and cumin.⁣ 3. Roast veggies at 425 degrees Fahrenheit for 20min.⁣ 4. Place cilantro sauce in food processor - avocado, yogurt, salt, pepper, cilantro & lime juice. Toss cabbage in avocado 🥑 cilantro sauce. ⁣ 5.
