#whatiatetoday my work was closed today, due to flooding (holla at northern indiana taking a pounding), and it was nice to have a day off during the midweek as a sort of mental health day 😌 i ate many things and drank a lot of water and coffee ☕️ 👍🏻 also drag race was tonight and i’m overwhelmed with how much i love @trixiemattel byyyyyeeeee #makeabbynotflabby
The health benefits of veganism are amazing, but honestly, I am and will always be 100% vegan for the animals. This pig vigil with @animalalliancenetwork is forever ingrained in my heart and soul. I had never seen so much pain in someone’s eyes until that day. I will never forget. Ever. 💔
Unfortunately my workout got cut a little short because my mom was at the gym with me and lost her keys. Had to look all over the gym, but we finally found them! Still a good workout though!

Breakfast was a banana and coffee with silk vanilla coffee creamer in my dope ass mug from my brother in law. Lunch was overnight oats with frozen berries and peanut butter, and dinner was vegetarian re fried bean burritos with brown rice and salsa 😍 so far this way of eating is so easy! Is it bad that I typically don't listen to what the specials are at restaurants (or the name of my waiter/waitress 😕)? To be honest, I'm either too busy glancing at the menu or thinking about what I'm in the mood for.
Today I challenged myself to actually LISTEN to what the specials were and that is how I ended up with this delicious Chicken Tamale Bake.
The bottom is a large slice of jalapeno cheddar cornbread topped with grilled chicken marinated in a tomato sauce, queso fresco, corn, sour cream and cilantro. Twas amazing and the perfect sweet and savory combo!! I hope everyone is challenging themselves in one way or another today!

I’ve always practiced intermittent fasting even before I knew it was a thing, but recently fasting has left me a bit hungrier and I was over eating by the time I broke my fast. I’ve decided to have a small meal or snack when I wake up. Trying to keep the fats high so it’ll hold me over for a few hours.

What I ate today:
#1. Made ahead coffee smoothie with splash of almond milk and chocolate USANA Nutrimeal.
Morning cellsentials, procosa for joints and proglucamune for immunity. No excuses for not having breakfast. Make the night before.
#2. Strawberries and almonds
#3. Salad made with 1/2 c brown rice and quinoa blend. 1.5 cup of tuna mixed with corn and edamame + frozen bag of cauliflower and sweet potato rice mix sautéed in stock. Pickes, mustard, olive oil and s/p + hard boiled egg. (This was thrown together with lack of groceries in the house. Still managed to pull something healthy together). Don’t stress about cooking...throw it together and cross your fingers!
#4. Leftover thawed frozen chili homemade with zucchini noodles, avocado, feta, red onion, tomatoes and hot sauce + sprinkle of crunchy chickpeas. .
