fajita-inspired (à la @frommybowl) pita pocket! Sautéed some red bell pepper & tofu pieces in garlic powder, smoked paprika, salt, pepper & lime juice. Stuck that in a @traderjoes whole wheat pita (10/10, incredible pita) w/ refried beans, shredded @daiyafoods pepper jack cheese block & of course topped with avocado 🥑 So easy to make, super flavorful & surprisingly quick! Will definitely be a go to lunch for me now 😋🌮 Also, sorry for the infrequent posts lately, I've honestly been feeling super uninspired & lazy with cooking (& tbh life in general). Is it bad that I typically don't listen to what the specials are at restaurants (or the name of my waiter/waitress 😕)? To be honest, I'm either too busy glancing at the menu or thinking about what I'm in the mood for. . . Today I challenged myself to actually LISTEN to what the specials were and that is how I ended up with this delicious Chicken Tamale Bake. . . The bottom is a large slice of jalapeno cheddar cornbread topped with grilled chicken marinated in a tomato sauce, queso fresco, corn, sour cream and cilantro. This was billed as the ‘light lunch’ option!!! Stopped off for a bite to eat at Edinburgh veggie institution Henderson’s which has been going since the 70s (as have I ). Practically rolled out after my two pretty generous salad selections and a portion of their veggie / vegan haggis, turnip & tatties and red wine gravy. What I ate today: #1. Made ahead coffee smoothie with splash of almond milk and chocolate USANA Nutrimeal. Morning cellsentials, procosa for joints and proglucamune for immunity. No excuses for not having breakfast. Make the night before. #2. Strawberries and almonds #3. Salad made with 1/2 c brown rice and quinoa blend. 1.5 cup of tuna mixed with corn and edamame + frozen bag of cauliflower and sweet potato rice mix sautéed in stock. Pickes, mustard, olive oil and s/p + hard boiled egg. (This was thrown together with lack of groceries in the house. Still managed to pull something healthy together). Don’t stress about cooking...throw it together and cross your fingers! #4. Leftover thawed frozen chili homemade with zucchini noodles, avocado, feta, red onion, tomatoes and hot sauce + sprinkle of crunchy chickpeas. . . #myfitroom #whatiatetoday
