You know what stinks about cooking in the middle of the night? Not having natural light coming through the window to take a halfway decent photo for Instagram. This was my breakfast today. A quick pan seared salmon seasoned with chili powder, smoked paprika and salt, pineapple salsa, and sugar snap peas sautéed in olive oil. I’ve decided to do a month of whole30 starting in January, so I’m testing out some easy meals.
Haven’t done a transformation in a while and the last one I did do was of my face, it’s really super important to compare pictures sometimes, especially when feeling down on your progress. It’s really crazy also to see the difference in Hayden in these 2 pictures. 😂 I could use the fact that I was only 2 weeks postpartum in the picture on the left but truth is I was already 13lbs under prepregnancy weight in that picture. If I can do this, anyone can. I’m still about 20lbs from my ultimate goal weight but I have ultimately found a better versioned myself. I’ve found my passion in health and fitness and can’t wait to get my personal training certification. Sorry for the ramble post, just a small update. 😜
Took a video today of me trying onnit total strength+performance preworkout. It was gross as expected. It has 4 carbohydrates. I don’t take preworkout maybe I’ll see benefits. If I do I more than likely won’t get any preworkout regardless.
Breakfast food for dinner before heading to bed. This is a chorizo breakfast hash courtesy of @budgetbytes with a fried egg on the side. I fry my eggs overhard, because runny yolks creep me out.
Workout ✅. 30 minutes of elliptical and a full body strength session.
Just wanna be able to work out in the middle of the night but also have access to a pool and classes. 😭 What am I supposed to do?! Tired of having to wait u til 4:30 in the morning to hit the gym.

This was a #mealprep that I did a couple of days ago but have been enjoying for lunch the last few days. I used yet another recipe from @budgetbytes for Apple Dijon Kale Salad. I added some grilled chicken to the mix, subbed dried cranberries for raisins, and added a touch of honey to the dressing to cut some of the acidity for the vinegar and mustard. I tend to get sick of salads after while, but I actually looked forward to eating this for the 3rd night in a row.
Took it easy with my workout today. did arm day, plus 25 minutes on the elliptical. Just trying to get back into the swing of things. My gym opens at 4:30 am and I am actually surprised by how many people are there that early. I am debating on whether or not to switch back to a 24 hour gym now that I’m non night shift.
*Cheeeeeeese Quesadilllas* Whole wheat tortilla filled shredded lowfat cheese, a tad of taco sauce, crumbled turkey bacon, peppers onions and diced tomatoes with a side of black bean. Greek yogurt for dipping (sour cream substitute)
