I was able to get in during off hours for a 1-on-1 private seating with 48 nigiris, three salads and free flow bubbles and sake. The official grand opening is Feb 3rd. . The style is essentially the same as the private events that Chef Sato did over the past few months. But there are a few misunderstandings by several notable reviewers so I’ll correct them here: . 1) It’s NOT strictly omakase - on the surface it looks that way with a long menu listing 30+ different neta on a white sheet of paper. But Chef Sato made a point not to make this an “omakase” only sushiya and offers “okonomi” which is the roots of edomae sushi. The sheet of paper is essentially a menu. You order what you want to eat. If you want omakase (which means, “chef, you decide”), then he’ll start from the top of the list. . 2) It’s NOT nigiri only - again, this is “okonomi” style (which means “choose what you want”) so you can ask him for sashimi, or to grill/broil the fish, etc. It’s old school and you have a lot of freedom. . 3) The shari has NOT changed. I can understand why people feel that way. It’s more about the timing. At Tokami, the first hour was spent on purely tsumami and it gave the red vinegar time to sink into the shari. At Hakkoku, the initial nigiri starts with the shari being younger and throughout the course, the shari becomes stronger. I know the blends etc and can vow everything is the same. Just when @d.sinn and I thought after kojima and Arai, this short trip couldn’t get any better. Then comes Takumi Shingo and drove our trip to the climax. Shingo, trained at Sushi Sho, continue its unorthodox omakase order where otsumami, sashimi and sushi does not come in ascending order. Every piece was an art of itself. It was just fireworks after fireworks for 2 straight hours. Just look at that katsuo, very slightly smoked to take out the fish stench, without any unnecessary garnish. So simple, yet so bold. Then look at the saba, the fish was sliced into three thin pieces with an extra long tail. When you bite the sushi, the tail wrap around the mouth. It was just so elegant it made me weep. Superb.
