When I stopped eating meat, I had to find new ways to get my protein in. That meant I needed to try new things...chickpea pasta was one of them..and it was delish. Although “pasta” is a carb, chickpea pasta counts as a protein for me in my vegan meal plan. So a little pasta salad went down, and it was bomb! (Chickpea pasta, cucumbers, tomatoes, salt, pepper, and nutritional yeast) Have you tried chickpea pasta before???
