My Shabbos preparations have never been simpler than now- being off sugar and wheat has its perks😄This took seconds to prepare (thanks to a good knife🙏🏻😄) and looked so pretty too!😌 (Check out that caramelization in the second photo😋) My only regret is not putting it in a pretty oven-to-table dish🙉 A crying shame 😢 Next time... Thinly slice zucchini (or whatever vegetables you prefer) and place in the way pictured. Drizzle with olive oil and sprinkle additional spices/herbs on top. Cover lightly with a parchment paper, cut to the size of your pan. Bake at 400 until caramelized. (Should be about 45 minutes- depending on the thickness of the vegetables.) Enjoy 😄***
