Can we just take a minute and appreciate how nutrient dense liver pâtè is? Liver’s dietetic nickname is Nature’s Multivitamin because there’s such a large assortment of vitamins and minerals packed into that part of the animal. Plus eating offal is the ancestral way to respect and appreciate the whole animal.
One of the best things about having local connections for quality meat is the ability to butcher and use the whole animal. This weekend we had beef heart, liver, and tongue. Fixed correctly, these parts can be delicious!
