Following the roasted pepper vodka sauce created the day before, I ran into the fact that I had to make food for an overnight guest. Searching around the fridge and pantry I took note of ingredients, came up with ideas, and double checked with the internet that it would work. Then it was off to the races.
While this sauce started out with garlic, shallot, smoked sausage, lemon juice, and red pepper flakes, I knew butter was going to be a key component in bringing out even more flavor. Many people who make cream sauces forgo butter, but it adds a dimension to dishes that they would otherwise lack. Everything in moderation, don't fear the butter.

🍴pad see ew with beef. This is probably one of my go to dishes at a Thai restaurant. It is also one of those dishes with which you can compare Thai restaurants. Here, it's not overly sweet or tastes overly of soy sauce. It strikes that perfect balance between savory and sweet with noodles that are easily separated and just the right amount of meat and veggies. 👌🏻 .
