Dinner tonight is one of my favourites - nachos! I’ve added mushrooms, carrots and capsicum to the sauce to get some extra veg in, then lettuce and green capsicum on top. So tasty! I make my own spice mix too - for 500g of beef I add 1.5tsp smoked paprika, 1/2 tsp cumin, 1tsp chili flakes, 1/2tsp garlic powder, 1tsp dried oregano, 1/2tsp pepper and 1tsp salt. I cook down onions and garlic to start, so there’s loads of flavour 👌🏼

Good morning or good night?? Lol. Just getting off work at 4AM. Just a slight correction to my last post. I managed to workout 3 times this week along with working 65... I repeat 65 hours this week. In addition to that, I took my mom to her scheduled surgery and spent the night with her so I could take care of her the next morning. Oh and I cleaned my kitchen pretty much every night when I got home, and did clothes 2 times this week. You wanna know the crazy part?? I feel great. I don't feel stressed, overworked, or exhausted. I'm just being a better version of myself and getting shit done!!

#Post 55 Chicken Biryani ❤️ INGREDIENTS: 600 grams boiled basmati rice 1 kilograms chicken thighs 4 tablespoon minced mint leaves 1 teaspoon garam masala powder salt as required 2 pinches saffron 2 teaspoon coriander powder 1 tablespoon ginger paste 1 tablespoon garlic paste 4 sliced & slit green chilli 2 tablespoon tomato puree 320 grams chopped tomato 400 grams thinly sliced white onion 2 teaspoon cumin seeds 8 green cardamom 6 tablespoon refined oil 1/2 teaspoon chilli powder 1 teaspoon powdered turmeric 6 tablespoon plain greek yogurt 1 tablespoon milk PROCEDURE: 1. To marinate the chicken, take a large bowl, put greek yogurt, turmeric chili powder along with salt according one's taste. Add the chicken thighs in the mixture and keep aside for about 20-30 minutes. Also, soak saffron in the milk and keep aside. 2. Pour refined oil in a deep-bottomed pan, keeping it on medium flame. Fry cumin seeds and green cardamom for about 2 minutes. Add the sliced onion and fry for 15 minutes. When the onion starts to get brown in color, add tomatoes and tomato puree and fry for another 5 minutes. 3. Add the slit green chilies to the mixture along with ginger-garlic paste, frying the mixture yet again for a minute. Then, add coriander powder, turn the flame to medium low, add the marinated chicken and mix for a while so that the ingredients absorb the juices properly. 4. Turn the flame to medium again and heat-through for about 5-6 minutes only to turn it over to low heat. Cover with a lid and let simmer for 5 minutes. Keep stirring during the entire process. Add little water if you find the consistency too thick. 5. Turn off the flame, take the boiled rice, putting half of its quantity in the pan, sprinkle milk soaked saffron along with garam masala, mint and coriander. Repeat same with the remaining rice. 6. Cover the lid, turn the flame to low medium and let simmer for about 5 minutes. Once done, put it off and let the biryani stay covered for about another 10 minutes. I do as much possible to get ready for the week, because as a busy working mum I have seen how much smoother the week runs if on the weekends I take the time to prepare. 1ST TIME OVERNIGHT OATS! Im only like 4 yrs late😂😂. Here's the deal, I don't have kids. So I was never in charge of other peoples food intake. Well these past few yrs I've become the meal preparer in our home. I think I have failed my family😳😳 My parents are 20yrs apart. So I have an almost 90yr old & an almost 70 yr old. None of us are figures of health. But lately my 68ish parent isn't doing well. And I feel like it's partially my fault. If children in a home are not properly nourished I would say its the adults RESPONSIBILITY to make sure they are as healthy as possible. Well I feel the same here. I haven't been shoving the CLEAN EATING lifestyle into any of us. Especially now that something is wrong, i feel like its my fault. SOOO tomorrow starts a new day with oats, chia seed, unsweeted almond milk, fruit & kale. Monday is a long overdue appointment making to the Dr. And hopefully its not too late to turn this ship around, cause things are looking a little scary. I'll let you know how they taste. Does anyone else have a sleep “window”? ~~ Like if you don’t go to bed when you are tired, then you miss your window and can’t fall asleep later???? ~~ Seriously I am usually ready for bed around 7, but I could NEVER get to bed that early, but then by 9ish, I’ve gotten my second wind and I’m wide awake until like 4am 😩😩😩 ~~ Well that’s what happens pretty much every night. Some days this is what your super foods look like. That's right, you don't always have to drink them! They can be made into so many yummy treats this is the first I have tried. Spicy Egg biryani Pink Radish Raita Methi Paneer Curry Mini Millet Roti and warming up with kickass Vanilla Cinnamon Bailey's Irish cream! @tomatoblues egg biryani post kept popping up in my dreams for a week now. Cldnt resist making them today with simple aromatics and masalas made this biryani in a pressure cooker. Grated radish, onions mixed with whisked curd, jeera powder and corinader mixture for the Raita. Methi Paneer, a mild curry with toasted paneer.
