Nut-crusted Cod with Lemon Bok Choy
Preheat oven to 425°F.
Start with raw pine nuts, pistachio nuts and pecans.
Finely chop and mix well.
Coat cod fillets with avocado mayo.
Press a generous amount of the nut mixture into the mayo-covered cod and place on parchment-lined baking sheet.
Sauteed baby bok choy or spinach with coconut oil, salt and pepper and a dash of lemon juice.
