Veggies (sweet potato, leeks, courgette, bell peppers, onions) roasted on a bed of lentils with some kind prawns thrown in at the end. One of those dishes where you can literally throw everything in a tray and let it do it’s thing then boom it’s all done and dinner is ready! Money saving Monday 💵 this week was cottage pie with a parsnip and swede mash on top 👌 plus a side of cabbage. £3.90, three of your 5 a day, very quick to make and delicious. Just fry the beef off and season, boil the parsnips & swede then mash, then dollop the mash on the mince and chuck under the grill. Perfect. To add flavour to your mince you could try mixed herbs, chopped tomatoes, chilli flakes or even marmite!

Eating healthy is good for you and it is actually fun if you know how. But sometimes you are eating out or at friends for takeouts and you still have to live your life. Luckily this local Indian had a section of the menu for the more health conscious. This was white fish marinated in turmeric cooked in the clay oven and served with onions and tomatoes. I chose a steamed lemon and coriander rice to go with it. Tofu has a bad reputation - I definitely used to think it was tasteless rubbery hippy fodder but if you apply the same principles you do to cooking your meat you can’t go wrong. Patient success! - - I was both delighted and humbled to read about one of my patients in @dailymirror just yesterday! - - She has featured in one of my patient videos and her story is incredible. Together we have worked on goal setting and monitoring and she continues to make health improvements. - - Among other lifestyle factors, she went from drinking 30 cans of Coca-Cola for 20 years to now drinking sparkling water. She used to drink about 70 litres of coke a week 😳 - - Her health soon deteriorated and she developed several lifestyle related conditions, including obesity and type 2 diabetes. - - We are now working on a lifestyle improvement plan and she is doing brilliantly! Happy Monday everyone!! Here is a one week before and after photo after my flare up (all my most attractive angles for you 😉😂). As you can see it is so much better !!! Just goes to show that consistency and positivity are key throughout all the ups and downs 🙌🏼 it still isn’t perfect and I am wearing a tiny bit of makeup but it’s all going in the right direction I hope you agree! As I said in my story, I wasn’t 100% “clean” last week (hate that word) but I’ve realised after each slip up (a few glasses of vino on Friday night, some chocolate on Valentine’s Day) it’s never really worth it for how it affects my skin and makes me feel the next day. These are all learning curves though and can’t expect to be perfect all the time. I also expect to encounter another flare up some point, again it’s all part of the healing process and the journey. Really feel like I’m on the right track though! Hope you’ve had a fab start to the week xxx
