15th door on our Christmas Advent Calendar. On this door we have my favorite Christmas dish with Paleo style! The recipe can also be found from the website. โ€ขOne of my favourite dishes on Christmas is a traditional Finnish potato casserole with syrup. Since I don't eat potatoes anymore I decided to try and make a Paleo version of this and it turned out delicious! Ingredients: (for 4 person) 3 medium size white sweet potatoes 100g butter/ghee 2tsp salt 2dl almond milk 1tbs almond flour 5tbs maple syrup Pre heat the oven to 200ยฐC(390ยฐF) Boil a litre of water in a large pan with the salt. Peel and cut the sweet potatoes into small cubes and add into the boiling water. Boil until soft, approximately 25 minutes. Once the sweet potatoes are ready pour the water off of the pan. Add the butter, almond milk and maple syrup and smash everything well together. Add the sweet potato mixture into a casserole and sprinkle the almond flour on top. Place into the oven for approximately 45 minutes or until golden brown. So here's my story! Picture 1.. I was getting back into working out and lifting and starting to see "gains" and may have been Losing weight. #2 was when I found out I was pregnant. A month or so after pic 1. And the almost end of the pregnancy. Went from 170 to 230 ish. ๐Ÿ˜ญ My doctor told me only walking, yoga and don't lift over 10lbs.. which was very unlike me but I listened to her. #3 is where I'm currently at .. 8 months postpartum. It was a rough first few months and then I just didn't take care of myself. But I'm ready now and need to start practicing self care, working out and eating properly.
