Baking to cope with stress, because I just put together our house projects, Caleb's work schedule, and kids starting school and I'm already tired. Anyone else bake as an escape? Or did I just define baking? Recipe for Rosemary Peach Pie below.
6 peaches peeled, cored, and thickly sliced, 1 sprig rosemary chopped, 3/4 cup packed brown sugar, 1/2 teaspoon salt, 1/2 teaspoon vanilla mixed together and put in a Cornmeal Dough (any pie dough will do). Bake at 425 for one hour, cover if getting too brown. Cool completely before serving. Also, do yourself a favor and whip cream with a bit of confectioners sugar and bourbon to serve on the side.

Mini Cherry Galette in Cornmeal Crust:
I had a cornmeal crust in my freezer, but have a recipe for it if you'd like it. I mixed about a cup and a half of pitted cherries with 2 tablespoons brown sugar, a dash of flour, salt, and orange bitters. Folded the crust around that sweet lil pile of goodness and baked for about 45 minutes at 400 degrees (or until brown).

It's all 🌧 on this first official week of summer, so we've been baking simple treats on the daily here. These 3 ingredient peanut buddies are perfect for baking with lil' buddies. And honey banana peanut butter?! Yes, please. 😍 Now, onto eating cookies and watching "Little Bear" in our jammies...
Recipe: one cup peanut butter of your choice (I used @helpgoodspread honey banana peanut butter), one cup sugar, one egg... mix until smooth. Each cookie should be two tablespoons of dough and mash them with a fork on a greased cookie sheet. Bake for 10-12ish minutes at 350. Allow to cool on sheet for 2 minutes before transferring them to a cooling rack.
Cereal Milk Cream Pie. 🌈 The other night, Caleb and I were on a date and grabbed some @bigspoonbham 's Fruity Pebbles cereal milk ice cream sammies- and at the peak of our awesome sugar high, Caleb said, "You should make this into a pie!" And so I did. The recipe is in the link in my profile.
